This sheet pan eggs and sausage bake is the perfect breakfast recipe that feeds the whole family. Made in one pan and ready to eat in less than 30 minutes.

  • This basic recipe can create many varieties. Change the protein to a different kind of sausage. Use your favorite spices to change up a flavor; try smoked paprika, Italian seasoning, powdered garlic.

Ingredient Notes

  • I used pre-cooked breakfast sausage made with chicken and apple by Applegate. Feel free to choose your favorite kind.
  • Potatoes. I made this recipe with Japanese sweet potatoes that are mildly sweet.
  • Eggs. I recommend choosing eggs from free-range chickens since the yolk plays a big role here, and it will be tastier this way.
  • This recipe was made with ghee since it is a high-temperature stable fat.

How to Make It

1.Gather the ingredients—Preheat the oven to 425F degrees. In the small saucepan, melt the ghee. Wash potatoes, remove imperfections, dice small, approx 1/4 inch. Add potatoes to the mixing bowl, add ghee, salt, and basil, mix well so that ghee coated all potatoes.

2.Arrange potatoes on the sheet pan lined with parchment paper.

3.Bake for 15 minutes till browned and soft, check potatoes with the fork. Remove from the oven, slightly move potatoes to make four “nests” for the eggs to hold the shape. Carefully crack each egg in the nest, place sausage on top of the potatoes. Season eggs with salt if desired. Bake for 3-5 minutes till egg whites are set, but yolks are still jiggly. Serve warm with ketchup or hot sauce.

  • Dice potatoes small so they can bake faster.
  • Use enough fat or oil to coat the potatoes so they are not dry.

  • 3 teaspoon basil , dry
  • 1 teaspoon sea salt
  • 7 oz sausage
  • 6 eggs
