Spelt Flour Cinnamon Rolls


These easy spelt flour cinnamon rolls are made with a twist! These are made with sprouted spelt flour, no yeast, and no refined sugar.

This is a quick and simplified recipe for homemade cinnamon rolls made in under an hour with no waiting time in between. The rolls turn out heavy and dense with a warm, buttery filling inside.

Ingredient Notes

  • Sprouted Spelt Flour. Because this recipe is made with nutritious sprouted spelt flour, these cinnamon rolls will be dense. If you are looking for rolls with a fluffy texture, use white, unbleached flour. It won’t be as nutritious, but the texture will be soft and cloud-like.
  • Coconut Sugar. I used coconut sugar for the sweet caramel notes.
  • Kefir. Whole milk kefir or goat milk kefir, unsweetened kind.

How to make spelt flour cinnamon rolls

1. Preheat oven to 375F degrees. Gather the ingredients. Make sure that the egg and kefir are at room temperature and that the butter is softened.

In a large mixing bowl, whisk the egg and add the four tablespoons of the softened butter.

In a measuring cup, add kefir and baking powder, mix vigorously till bubbles appear, and the mixture will become foamy.

2. To the bowl with the egg mixture, add kefir, 1/4 cup of sugar, and one tablespoon of cinnamon.

Mix till blended. Slowly start adding two cups of flour.

3. Start adding the third cup of flour and slowly kneading it in the dough. Form the ball.

4. On a large surface, sprinkle the flour and roll out the dough, flipping it several times while rolling. If the dough is still sticky, add more flour.

Don’t overdo it since spelt flour is dense, and we want to have softer cinnamon rolls.

Using a rolling pin, roll to create a rectangular shape. Evenly spread seven tablespoons of butter.

5. In a small bowl, mix 1/2 cup of sugar with two tablespoons of cinnamon and generously sprinkle the mixture on top of the dough.

Use a knife or palms of your hands to even out the mixture.

6. Start creating a roll, slightly pressing while rolling in.

Roll gently, and make sure there is no empty space in the layers of the roll.

7. Slice in half. Use a sharp knife and make cuts slowly. Then, slice each half in half and create a total of 12 equally sized rolls.

8. Arrange in the baking dish lined with parchment paper. The rolls will expand, so make sure there is some space in between the rolls.

Bake on the middle shelf for 30 minutes till rolls turn slightly golden.

Optional step. Use some frosting if desired.

  • 11 tbsp butter divided
  • 1 1/2 cup kefir room temperature
  • 2 tsp baking powder
  • 3/4 cups coconut sugar divided
  • 2 1/2 tbsp cinnamon divided
  • 3 cups sprouted spelt flour
