Healthy Cinnamon Rolls

These easy healthy cinnamon rolls are made with a twist! These are made without yeast, and instead of the white flour, we used sprouted spelt flour.

This is a quick and simplified recipe made in under an hour with no waiting time in between.

Key Ingredients

  • Flour. Because we are using a sprouted spelt flour, these cinnamon rolls will be dense and on the heavy side. To have a light and fluffy texture, use white flour similar to this flour. Since it’s white flour, it won’t be as nutritious, but the texture will be fluffy and cloud-like.
  • Sugar. I used coconut sugar. Feel free to use your favorite kind.
  • Kefir. Choose kefir without additives and without added sugar.

Ingredients

  • 1 large egg
  • 11 tablespoons of butter , divided
  • 1 1/2 cup of kefir , room-temperature
  • 2 teaspoons of baking powder
  • 3/4 cups of coconut sugar . divided
  • 2 1/2 tablespoons of cinnamon , divided
  • 3 cups (plus extra for rolling) of sprouted spelt flour

HOW TO MAKE HEALTHY CINNAMON ROLLS - STEP BY STEP PHOTOS

Step 1. Preheat oven to 375F degrees. Gather the ingredients. Make sure that egg and kefir are room-temperature and butter is softened. ingredients to make cinnamon buns

Step 2. In a large mixing bowl, whisk the egg, add the 4 tablespoons of the softened butter. In a measuring cup, add kefir and baking powder, mix vigorously till bubbles appear, and the mixture will become foamy.  mixing bowl with egg and measuring cup with kefir

Step 3. To the bowl with the egg mixture, add kefir,  add 1/4 cup of sugar, and 1 tablespoon of cinnamon. Mix till blended. Slowly start adding two cups of flour.  mixing bowl with egg, butter, cinnamon mixture and measuring cup with flour

Step 4. Start adding the third cup of the flour and slowly kneading it in the dough. Form the ball.  mixing bowl with bun dough

Step 5. On a large surface, sprinkle the flour and roll out the dough, flipping it several times while rolling. If the dough is still sticky, add more flour. Don't overdo it since spelt flour is dense, and we want to have soft cinnamon rolls. Using a rolling pin, roll to create a rectangular shape. Step 6. In a small bowl mix, 1/2 cup of sugar with 2 tablespoons of cinnamon and generously sprinkle the mixture on top of the dough. Use a knife or palms of your hands to even out the mixture.  rolled dough with cinnamon mixture on top

Step 7. Start creating a roll slightly pressing while rolling in. Roll gently, and make sure there is no empty space in the layers of the roll.  two rolls ready to be sliced

Step 8. Slice in half. Use a sharp knife and make cuts slowly. Then slice each half in half and create a total of 12 equally sized rolls.  dough sliced in the shape of the rolls

Step 9. Arrange in the baking dish lined with parchment paper. The rolls will expand, so make sure there is some space in between the rolls. Bake on the middle shelf for 30 minutes till rolls turn slightly golden. Optional step. Use some frosting if desired.  cinnamon rolls inside the white baking dish

Tips For Success

To make these spelt cinnamon rolls successfully, there are several tips to follow:

  • Use softened butter.
  • Use warm or room-temperature kefir.
  • Line baking dish to keep cleanup easy after.
