  • Cabbage. To save time, buy a pre-shredded cabbage mix or get a cabbage head and slice it thinly. If possible, use the purple kind since it has a slightly sweeter flavor.
  • Ghee. Feel free to use coconut oil instead.
  • Optional protein add-on. If craving more protein, the great options would be: shredded chicken or shrimp.

How to Make It

1. Gather the ingredients – Cook ramen noodles In the large Dutch oven. Boil according to the package directions. Don’t overcook. Drain and rinse. Let is sit in the colander.

2. Using the same pot over medium-high heat, melt one tablespoon of ghee. Once warm, add cabbage mix, stir till cabbage is slightly soft but still crunchy. Reduce heat, add coconut milk, salt, curry powder spice, cashews nut, mix to combine – Cook for 2 more minutes.

3. Add noodles to the pot last, stir and serve.
