  • Sweet onions. Sweet onions have a mellower bite and more sweetness than regular white sugar. Their sweetness pairs well with smoky and salty bacon.
  • Bacon. You can’t have bacon-wrapped onion rings without bacon! Bacon serves as a savory substitute for the crunch of fried breading.
  • Coconut sugar. Coconut sugar is lower on the glycemic index-meaning the body absorbs it more slowly. It also provides a slight molasses flavor to the onion rings.
  • Chili spice. Chili powder cuts through the fattiness of bacon by adding a bit of heat, which also compliments the sweet onions.
  • Optional. If you don’t have any chili powder on hand, smoked paprika is a great substitute.

How to Make It

1. Gather the ingredients—Preheat the oven to 425F degrees. Cut the ends off onions. Slice into six thick onion rings, approximately 1 1/2 inch thickness. Separate the rings, make sure each has 2-3 layers.

2. Wrap an entire onion ring with a bacon slice threading through the middle. For each circle, use two slices, slightly overlapping and stretching while wrapping. Arrange on the baking rack inside the baking sheet. Sprinkle with sugar and chili powder.

3. Bake on the middle rack for 15 minutes till fully cooked and brown. If you are looking for more crisp, broil on high for 2-4 minutes before serving.
