Fresh Tortellini. I used Porcini mushroom tortellini. Ground beef. Onion. Choose sweet Vidalia Onion for a milder flavor. Fresh spinach, cut off the stems if they are too long. Fire-roasted diced tomatoes, make sure the can is without added salt. Spices: Italian seasoning, garlic powder, lemon juice, salt.
How to Make It
Step 1. Gather the ingredients. Dice onions small. Set Instant pot to “saute” setting, add a tablespoon of ghee. Once the ghee is heated, add diced onions and cook till soft.
Step 2. Add the ground beef to the onions. Cook till no longer pink, using a wooden spoon to stir and break large chunks of meat. Once cooked, turn the “saute” button off.
Step 4. Cover Instant Pot with lid, seal, and set the timer for 2 minutes on high pressure. It will take approximately 10 minutes for pressure to build.
Step 5. Once the timer is up and you hear the beeping sound, do a manual pressure release. Open the pot, add spinach, and stir. Taste and adjust the salt.
Step 6. Serve with your favorite toppings: grated cheese, a dollop of yogurt, or sour cream.
Tips For Success
This instant pot soup is heavy on tortellini, just how my family likes it. You can reduce the tortellini amount and only use one package if you desire.
It’s important not to overcook tortellini, do not let it sit in the sealed instant pot longer. Release the pressure once the timer is up.
Keep it flavorful, taste at the end and adjust the seasoning; add more salt if needed or acid (lemon juice).
Serve right away. The tortellini’s texture is not forgiving, and this dish doesn’t store well, so it’s better to enjoy it right away.
If you want to make creamy tortellini soup, add a cup of heavy cream at the end.
Topping ideas: crashed tortillas chips, fresh herbs, freshly grated cheese, even croutons! And don’t forget to add a dollop of sour cream or yogurt!
