Mozzarella Stuffed Meatloaf

Easy mozzarella stuffed meatloaf made gluten-free using only seven ingredients. This meatloaf recipe is juicy and made in one dish.

Ingredients

  • 1 pound of ground beef
  • 1/2 of large Onion , diced small
  • 3/4 cups of gluten-free rolled oats
  • 6 tablespoons of ketchup , divided
  • 1 egg
  • 1 teaspoon sea salt
  • 12 ozs mozzarella cheese (3/4 of the large log)

Directions

  1. Gather the ingredients. Preheat the oven to 375F degrees. ingredients to make meatloaf with cheese
  2. Dice onion small.
  3. In a mixing bowl place all the ingredients, including 4 tablespoons of ketchup. Mix to combine. mixing bowl with ground beef, onions, oats and egg
  4. Divide the meat into two parts. mixing bowl with two balls of ground beef
  5. In an oven-safe dish place one half of the meat. Press tightly to form the meat layer. baking dish with layer of ground beef
  6. Layer the mozzarella slices, slightly overlapping and keeping away from the edges. baking dish with ground beef layer and mozzarella cheese
  7. Place the second meat part to form the layer on top. Using two tablespoons of ketchup spread the sauce all over on top to cover the meat layer. baking dish with meatloaf before going inside the oven
  8. Bake for 45 minutes. Cool for 5-10 minutes before slicing. baking dish with freshly baked meatloaf

Notes

To make this dish healthy, use ketchup without sugar or with reduced sugar.

Don’t overmix to keep the meatloaf texture soft and tender.

The internal temperature of the cooked meatloaf should be 165 degrees.
