Quick Chili Baked Potatoes


These gluten-free chili baked potatoes are quick and easy to make! They are nutritious, baked with chili flavored meat sauce and black beans, and are super flavorful. The cooking time is reduced in half using a simple shortcut step.

Ingredient Notes

  • 3 medium sized sweet potatoes
  • 1 pound of ground beef
  • 1 can of diced tomatoes
  • 1 can of black beans , can opened, beans rinsed
  • 1 teaspoon of salt
  • 3 teaspoons of chili powder
  • 3 tablespoons of balsamic vinegar

How to Make It

1. Gather the ingredients. Preheat the oven to 425F degrees. Prep potatoes. Wash, scrub well, remove imperfections. Slice in half lengthwise, poke both sides with the end of a sharp knife or fork.  Arrange on the sheet pan lined with parchment paper, facing flat side up.

2. Bake for 20 minutes. Then, turn potatoes facing flat side down and bake for 15 more minutes.

3. Prep meat sauce. While potatoes are baking make a meat sauce. Preheat a skillet on medium-high heat, fry ground beef till no longer pink breaking large chunks of meat with the spoon. Once cooked, add the rest of the ingredients: diced tomatoes, rinsed beans, chili powder, balsamic vinegar, salt. Cover and simmer for one or two minutes on low heat.

4. Assemble together. Place potatoes on the serving dish. Slice potatoes in the middle to create a flat surface for meat sauce. Spoon the meat sauce on top. Serve hot.

Recipe Tips

Choose organic potatoes if possible since we are keeping the skin on here.

Choose all even-sized potatoes and use a smaller size if possible to speed up and simplify the baking process.

This recipe doesn’t use any oil and it works just fine, crispy skin and all.

To save even more time cooking on the busy weeknight, pre-boil potatoes day in advance and all it will take is to make the meat sauce the next day. Broil in the oven for two minutes to warm up.

Variations

To make this recipe meatless, use canned jackfruit.

Use chickpeas instead of beans.

The sky is the limit here, you can add spinach or kale to the meat sauce, use extra spices like smoked paprika and add some shredded cheese or yogurt on top when serving.
