These oven-baked chicken skewers made with honey-lemon marinade are a healthy and quick dinner option with minimum ingredients and minimal steps involved. These skewers are juicy, filling, and satisfying.

Ingredients

  • 3 chicken breasts 
  • 2 bell peppers (different color for more festive look)
  • 2 small vidalia onion
  • 1/4 cup of olive oil
  • 2 tablespoons raw honey
  • 3 tablespoons of lemon (juice and zest)
  • 1/2 teaspoon of salt

Directions

  2. Make the marinade. Juice the lemon. In a large measuring cup, add olive oil, raw honey, lemon juice, and lemon zest, salt. Stir well. sliced chicken in the bowl

This recipe makes 6 skewers.

Serve as is or on the bed of rice or mashed cauliflower.

If using wooden skewers, pre-soak to avoid getting them burned in the oven.

If time allows, leave the chicken in the marinade longer for better flavor.
