Step-by-step instructions

  1. Gather the ingredients. Preheat the oven to 425F degrees. Prepare a small-sized sheet pan. Clean bell peppers, remove seeds, slice into 1-inch thick chunks.

2. In a large dish add lime juice, coconut aminos, chili powder, minced garlic. Stir well to combine. Slice the chicken, add to the dish with the marinade and stir to make sure the chicken is well coated.

3. To make these rainbow chicken skewers alternate between meat, onion, and different bell pepper colors to create colorful skewers. Arrange above the rim of the baking sheet pan. Bake chicken kabobs in oven on a middle rack for 15 minutes. Then turn over and broil on high for 5 more minutes.

    Ingredients
      

    • 2 chicken breasts  large, aprox 1 1/2 lb
    • 4 bell peppers different color for a festive look
    • 1 red onion medium
    • 1/2 cup coconut aminos
    • 1 lime juice only
    • 1 1/2 tsp chili powder
    • 1 tbs garlic dry minced

    Instructions
     

    • Prep. Gather the ingredients. Preheat the oven to 425F degrees. Prepare a small-sized sheet pan.
    • Make marinade. Juice the lime. In a large dish add coconut aminos, lime juice, chili powder, minced garlic. Stir well to combine.
    • Slice and dice. Wash and pat dry the chicken breasts, slice into half an inch cubes, add to the dish with marinade and stir to coat it well in the marinade. Peel and slice onions, dice large. Clean bell peppers, remove seeds, slice into 1-inch thick chunks.
    • Making kabobs. Start threading kebabs on the skewers. Alernate between meat, onion, and different bell peper colors to create colorful skewers. Arrange above the rim of the baking sheet pan.
    • Bake. Bake in the preheated oven on a middle rack for 15 minutes. Then turn over and broil on high for 10 more minutes moving it to the top rack. To make sure chicken is still soft and moist, it's important not to overcook. Use a meat thermometer, the chicken internal temperature should measure at 160 degrees.
