Recipe Features

  • All it takes is less than 30 minutes from start to finish.
  • Choose gluten-free tortillas and make them gluten-free.
  • Satisfying and works even with picky eaters.
  • Baked instead of fried, so no extra oil to make them.

Key Ingredients

ingredients to make quesadillas

Ingredient Notes

  • Cheese. I used Kerrygold Dubliner cheese since it’s widely available and easy to find; any hard cheese would work.
  • Tortillas. I used Siete burrito-sized tortillas made with cassava and coconut flour.
  • Instead of chili powder, feel free to use taco seasoning mix.

How to Make It

1. Gather the ingredients. Start with tortillas. In a large skillet on medium-low heat, melt the ghee. Warm each side of the tortilla for about a minute. Once finished, fold.

2. Add ground beef, raise temperature to medium-high and fry till cooked and no longer red. Break large chunks with a wooden spoon, stir in ketchup, chili spice, salt. Mix well.

3. Preheat the oven to 450 F degrees. Start making quesadillas. First, add cheese, top with beef mixture, add more cheese, gently fold.

Recipe Tips

  • This is really a fail-proof recipe. Quality ingredients will make it a tasty meal.
  • If using Siete tortillas, it’s important to prepare them by warming them first according to the package instructions. This will make them pliable; without this step, this recipe won’t work.
  • Optional. If desired for more flavor, add black beans, corn, onions.
  • For dipping, use guacamole, sour cream with herbs (as pictured), or salsa.

It’s just the two of us so we halved everything. Also added a bottom crust(not deep dish). I was nervous because it looked like a long time to make, but it was fine because it was mostly idle time just letting the filling cook.
