Tortillas. I used Siete burrito-sized tortillas made with cassava and coconut flour.
Instead of chili powder, feel free to use taco seasoning mix.
How to Make It
1. Gather the ingredients. Start with tortillas. In a large skillet on medium-low heat, melt the ghee. Warm each side of the tortilla for about a minute. Once finished, fold.
2. Add ground beef, raise temperature to medium-high and fry till cooked and no longer red. Break large chunks with a wooden spoon, stir in ketchup, chili spice, salt. Mix well.
3. Preheat the oven to 450 F degrees. Start making quesadillas. First, add cheese, top with beef mixture, add more cheese, gently fold.
4. Arrange all quesadillas on the baking sheet. Place in the preheated oven on the medium rack, fry for 10 minutes till golden and crispy.
5. Using a pizza cutter, slice in half. Serve with your favorite dip.
6. Enjoy while still warm. Serve with sour cream, guacamole, or salsa.
