Tips on the ingredients:

  • Beef liver. If possible, get quality liver from a healthy grass-fed animal.
  • Apples. The sweet kind will work the best in this recipe. I used Gala kind.
  • Onions. I recommend using sweet onions since the flavor is mild.

Tips for success.

  • To check if the liver is cooked, no blood should be coming out when slightly pressing with a spatula.
  • There is a trick to cooking the liver. To achieve cooked but still tender liver bites, you want to cook it on high and quick. Cooking longer might result in tough, hard to chew pieces of liver.
  • It’s much easier to use kitchen scissors to cut the liver into large cubes.
  • Serve with mashed sweet potatoes or mashed cauliflower.
