This beef liver recipe and onions recipe is made with simple ingredients in less than 30 minutes. It’s a nourishing, flavorful, and nutrient-rich dish.

Beef liver. If possible, get quality liver from a healthy grass-fed animal. The calf’s liver would be the best in this recipe since it will be more tender.
Apples. The sweet apple variety will work the best in this recipe. I used Gala kind, Fuji will work here too.
Onions. I recommend using sweet or yellow onions since the flavor is milder.
1. Gather all the ingredients. Peel and slice the onion into a thin half-moon shape. Preheat cast-iron skillet on high heat. Once preheated add a tablespoon of ghee, make sure the bottom of the pan is coated with the fat before adding onions. Fry onions for 3-4 minutes till soft and slightly golden.
2. While onions are frying, core apples, and slice into a half-moon shape. Once onions are cooked, remove them from the skillet and temporarily place them in a different dish. Add a tablespoon of ghee to the same pan, add apples to the pan and fry for 2-3 minutes till slightly soft. Remove apples, add to the same dish with onions.
3. Add one more tablespoon of ghee to the still-hot skillet, using kitchen scissors cut liver into large cubes, fry constantly stirring for 5-7 minutes
4. Add onions and apples to the cooked beef liver, add salt, apple cider vinegar, stir well.
When frying beef liver ensure sure that the skillet has plenty of fat.
It’s much easier to use kitchen scissors to cut the liver into large cubes.
Don’t overcook the liver to keep meat bites tender and on the soft side. There is a trick to cooking the liver. To achieve cooked but still tender liver bites, you want to cook it on high and quick. Cooking longer might result in tough, hard-to-chew pieces of liver.
To check if the liver is cooked, no blood should be coming out when slightly pressing with a spatula.
Serve with mashed sweet potatoes or mashed cauliflower.
Some people believe that soaking beef liver in milk for 2 hours before cooking will help to remove the gamey taste and make the liver more tender.
